Dal Fry (Jain) – A smooth, flavourful yellow dal tempered with ghee and select spices. I use no onion or garlic, yet bring out a rich, satisfying taste.
Dal Tadka (Jain) – Yellow moong dal or toor dal with a special Jain tadka of mustard seeds, hing, and curry leaves. A perfect balance of lightness and taste.
Bhindi Masala (Jain) – Fresh okra cooked with tomato purée and Jain-friendly spices. I make sure it stays crisp and non-sticky, just the way it should be.
Green Peas Masala (Jain) – Soft green peas cooked in a lightly spiced tomato gravy. It’s mild, nutritious, and comforting.
Chana Masala (Jain) – White chickpeas slow-cooked with tomato, ginger, and Indian spices. I make it mildly tangy with natural ingredients.
Palak Paneer (Jain) – Cottage cheese in a smooth spinach-based gravy, with no onion or garlic. I add a hint of cream and mild spices for richness.
Paneer Butter Masala (Jain) – Paneer cubes in a buttery tomato sauce, slightly sweet and creamy. It’s satvik but still indulgent.
Paneer Bhurji (Jain) – Crumbled paneer cooked with capsicum, tomato, and a blend of Jain masalas. It’s light and protein-rich.
Veg Kolhapuri (Jain) – A spicy mix of vegetables in a dry masala. I use coconut and dry spices instead of garlic to retain that bold flavour.
Veg Kadai (Jain) – Bell peppers, tomatoes, and paneer tossed in kadai masala without any root vegetables. A perfect combination of texture and taste.
Cashew Nut Curry (Jain) – Roasted cashew nuts in a mild, creamy curry base. A royal treat for those who prefer richness without strong spices.
I cook all Jain dishes separately from the main kitchen prep. I use separate utensils, fresh oil, and ensure there’s no cross-contamination with onion, garlic, or root-based ingredients. My approach is personal and respectful, because I know these preferences are based on deep belief and tradition.
